Hot Box Roasting and Food & Wine Preview with Kare 11
Madden Lodge Executive Chef Paul Fitzpatrick joined Bryan Piatt and the KARE 11 team in the Backyard this week to talk unique ways to grill outdoors – including a demo of La Caja China hot box roaster, which we use regularly at our restaurants and events. See the clip here.
Hot box roasting is a Cuban method of cooking used originally to cook pigs, utilizing a rectangular wood or metal box with a tight fitting lid and charcoal heat. The style is perfect for cooking ribs, whole chickens, and other meats as it uses low heat intensity over longer cooking periods.
Paul also gave a preview of our annual Food & Wine weekend, coming up on August 24-27 featuring celebrity chefs from the Twin Cities and around the country and hands on demos, educational sessions and plenty of tastings.
